The dinning room of our vintage Outpost Lodge has served many guests from around the world. As well, many kinds of events from weddings to fun family outings have been hosted.
Over the years we have been asked for our recipes so many times that we decided put together this book full of our favourites and standby dishes that always please our clients.
Due to the many outdoor activities, and the great food at the Outpost Lodge, we always see great appetites in our dinning room. Ann and I have served family style meals (on separate plates, sauce on the side) for so many years now that we now have no idea how much a regular person eats!

Broccoli Slaw
This is a wonderful, cold, crunchy salad that everyone seems to love! It is easy to make and keeps well in the fridge. It is fun to experiment with different ingredients such as nut or different kinds of cheese. Enjoy!
½ cup miracle whip or mayonnaise
¼ cup white vinegar
¼ cup sugar
1 cup grated cheese - try ½ cheddar and ½ mozzarella
6 or 7 slices crunchy bacon
1 small onion
1 large head broccoli - works well with frozen too!
Whisk the first three ingredients together well. Microwave cooking is great for bacon cooking. Add all remaining ingredients, coating everything well. Refrigerate until serving.
Butter Tart Squares
Crust:
1 cup flour
½ cup butter or margarine
2 tbsp white sugar
Topping:
1 ½ cups brown sugar
2 eggs
3 tbsp flour
½ tsp vanilla
1 cup raisins optional
Cream butter. Cut in flour and sugar with a pastry knife. Press gently into a 9x9" pan and bake at 350° for 15 minutes. While base is in the oven, beat all topping ingredients together until smooth. Pour on top of hot base and bake for another 12-15 minutes. Do not over bake - should be a little wobbly with a light golden brown crust. Serve small squares with vanilla ice cream. |
